Ingredients:

1 cup gluten-free flour
2 eggs
1/2 cup flaked coconut
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon xanthan gum
1/2 teaspoon salt
1/2 cup coconut milk
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1/4 cup chopped walnuts
3/4 cup white sugar

Directions:

  1. In blender blend all wet Ingredients. Add dry ingredients and blend
    thoroughly.
  2. Lightly grease baking pan of air fryer with cooking spray.
  3. Pour in batter. Cover pan with foil.
  4. For 30 minutes, cook on 330°F.
  5. Let it rest for 10 minutes
  6. Serve and enjoy.
